Recipe of Homemade Palabok

This is one of my sons favorite dishes and one of Auntie Elsie's most requested dishes. Alot of the steps require putting parts of the dish aside until it all joins together. And you have to have patience but so worth it in the end.
Ingredients and spices that need to be Prepare to make Palabok:
- 5 cups luke warm water
- 1 bag palabok noodles
- 5-6 cloves garlic
- olive oil for frying
- 1 bunch green onions chopped
- 1/2 pack red annato powdered seasoning
- 1/2 pound baby scallops
- 2 cans smoked oysters
- 1 package frozen cooked mussels
- 1 / 2 pound shrimp 50-60 count
- 2 packets mama sita palabok seasoning mix
- 1 bag chicharrones or pork grinds (crushed finely)
- 1 lemon cut into wedges for garnish and serving
Instructions to make to make Palabok
- Soak Palabok noodles in hot water until soft. Drain
- Add about 4 inches of water to a large pan. Just enough water to cover the noodles that you will be putting in. Bring water to a simmering boil, turn off heat and add softened noodles. Let noodles kkstand in hot water for 7-9 Minutes. Drain noodles. Set aside.
- Add olive oil to pan. Add onion and garlic and sautee. Then add annatto seed powder. Sautee until it turns bright. Add drained noodles and mix well, set aside.
- In a large bowl, mix 2 powdered mama sita palabok seasining in 5 cups of lukewarm water, set this aside.
- In a large pan, saute green onions and garlic in olive oil. Add squid, shrimp, bay scallops, and last cooked frozen mussels. This will create a broth. Remove seafoods from broth
- Let broth boil then turn down to medium and add mama sita mixture. Cook stirring constantly until thick
- Mix cooked noodles and seafood together. Poor thickened sauce onto noodles. Fold in cooked canned oysters.
- Mix gently until incorporated and cook covered under low heat until warmed through.
- Top with crushed chicharrone. Serve with freshly cut lemon wedges to squeeze on top. Serve.
