- 1 kg beef
- 2 cans coconut milk
- 100 gr ginger
- 3 onions
- 2 red bell pepper
- 100 gr chili Thai (if you don't like spicy, reduce the numbers)

- 4 tsp coriander powder
- 3 tsp cumin
- 3 tsp black pepper powder
- 4 bay leaves
- 1 turmeric segment (5-6 cm)
- 1 lemongrass
- 3 cm galangal (slice it)
- 1/2 cup veg oil for sauteing
- 8-10 walnuts (to replace the candlenut)
- 1 tbsp tomato paste
- 3 tsp salt
- 1 cube palm sugar (like the picture)
Instructions to make to make Beef Rendang/Rendang Daging ala Perantauan šš
- Wash and peel the ingredients that need to wash and peel. Cut the onions, garlic, bell pepper, ginger, and turmeric. Blend the ingredients using a blender except for lemongrass, bay leaves, and galangal./Cuci dan kupas bahan yang perlu dicuci dan dikupas. Potong bawang bombay, bawang putih, paprika, jahe, dan kunyit. Haluskan bahan menggunakan blender kecuali serai, daun salam, dan lengkuas.
- Prepare the saucepan, add the oil, heat it, and saute the blended ingredients till the aroma comes out. Then add the lemongrass, galangal, bay leaves, salt, and palm sugar./Siapkan panci, tambahkan minyak, panaskan, dan tumis bahan yang sudah dihaluskan hingga tercium aromanya. Kemudian tambahkan serai, lengkuas, daun salam, garam, dan gula aren.
- Add the meat, stir it, close the lid, cook until the meat water comes by itself. Add 1/2 cup of water and coconut milk. Continue to cook and stir it every 10 minutes, so the bottom part is not burning./Tambahkan daging, aduk, tutup, masak hingga air daging keluar dengan sendirinya. Tambahkan 1/2 cangkir air dan santan. Lanjutkan memasak dan aduk setiap 10 menit, agar bagian bawahnya tidak gosong.
- Cook the meat till all the water is running out and only the spicy is remaining. The dark changing color and oil from the remaining spicy are showing if the rendang is ready or not./Masak daging hingga air habis dan hanya tersisa pedasnya. Warna gelap yang berubah dan minyak dari sisa pedas menunjukkan apakah rendang sudah matang atau belum.
- Beef rendang ready to serve accompanied by spicy green sambal, boiled kale (I replaced instead cassava leaves, it has almost the same textures), and cucumber as a salad to complete the dish./Rendang daging sapi siap dihidangkan ditemani sambal hijau pedas, daun kale rebus (pengganti daun singkong) dan timun sebagai lalap melengkapi hidangan.
